I’ve made this probably 10-15 times and it’s always a go to. It’s healthy, tasty, and even has a little kick to it since the recipe calls for crushed red pepper. I take it out of the oven as soon as my thermometer hits 165 degrees, let it sit for about 15 minutes, then slice away. The last time I made this, I pureed the vegetables instead of chopping them so that I didn’t have large pieces mixed in with the turkey meat – there is no taste difference. Just make sure when you sauté the vegetables that you get most of the water out of them. This recipe is excellent – give it a try!
