French Toast Sticks w/ Vanilla Cream

French toast is my favorite breakfast on a Sunday. Let the bread soak in the egg at least 5 minutes on each side, and make sure the pan is hot on medium heat when you start cooking. It’s not the healthiest of dishes – you need to make sure butter is always in the pan to give it that color and crust that makes french toast so good. If my friend Curtis ever reads this maybe someday he will send me some Vermont Maple Syrup for this dish!



  • Any thick cut bread, preferably Brioche
  • 6 eggs
  • 1 Tablespoon cinnamon
  • 2 Teaspoons vanilla extract
  • 1 Teaspoon honey
  • 1 Tablespoon butter
  • 1/2 Cup creme fraiche
  • Powedered sugar
  • Maple syrup



  1. Crack eggs into a shallow plate and add cinnamon, 1 teaspoon vanilla extract, 1 teaspoon honey and mix
  2. Dip bread into egg mixture and let each side sit for 1 minute to soak up the egg
  3. Melt butter in a non stick pan over medium heat
  4. Place bread in the pan and let it cook until browned and crisp on each side (approx 2 minutes per side)
  5. Mix creme fraiche with 1 teaspoon vanilla extract (add cinnamon if you’d like) and mix.
  6. Drizzle maple syrup on a plate with a few drops of cinnamon
  7. Add french toast to the plate
  8. Top off with more syrup, vanilla cream mixture, and powdered sugar
